YOUR HEALTHY PLATE: Strawberried, Blueberried Salsa

The Free Dictionary defines salsa as a spicy sauce of chopped (usually raw, but not always) vegetables or fruit, especially tomatoes, onions and chili peppers. You may not have realized, however, that salsa doesn’t necessarily mean tomatoes. In Spanish, salsa means, simply, sauce, and salsa comes in lots of different versions, such as negra (black, with dried chilis) and verde (green, with herbs and tomatillos), not to mention, of course, roja (red, with plenty of tomatoes, onions and garlic). This particular salsa features berries to grand effect!

  • 1 c. fresh blueberries
  • 1 c. strawberries, chopped coarsely
  • 1 c. diced jicama
  • 1/3 c. chopped cilantro
  • 1/4 c. red onion, diced small
  • 2 Tbsp. jalapeno pepper, seeded and finely chopped
  • 1 lime, juiced
  • 1/2 tsp. Kosher salt

In a medium-sized bowl, combine all ingredients except salt and stir well. Sprinkle with salt and toss gently. Makes approximately 3 cups.

You can easily convert this recipe into a salad, too, by doubling the amounts of jicama, cilantro, and lime, adding 1/3 cup parsley, and then cutting the strawberries and jicama into larger pieces.
