YOUR HEALTHY PLATE: Chocolate Avocado Pudding — Shhhh!

Just don’t tell anyone how you made this.

3 large avocados (soft and ripe, with bright green flesh)
1/4 cup cocoa powder (not hot cocoa mix)
4-5 Tbsp. coconut milk
1 tsp. vanilla extract
2 tsp. coconut oil
2 Tbsp. honey (raw is recommended, but not essential)

Place all the ingredients in a blender, and spin at high speed for one minute, until perfectly smooth. Spoon into small cups, or shot glasses for mini-sized servings, or wine glasses for a memorable presentation. Refrigerate at least 30 minutes. Garnish with a mint leaf, or sprinkle of coconut, or walnut half. Serve cold. Makes enough for 2-6, depending on your audience.
