YOUR HEALTHY PLATE: Oats & Strawberry Crumble

Sometimes you need a nice little dessert. Maybe something to go with a scoop of ice cream. Or a glass of tea. Not too sweet, but just sweet enough. This might be the perfect thing.

Oats:
3 c. rolled oats
1/3 c. almond butter
1/3 c. coconut oil
2 Tbsp. brown sugar
1 ½ tsp. baking soda
1 tsp. vanilla extract
1/4 tsp. salt

Strawberries:
2 c. strawberries, chopped
1 tsp. honey (optional–espec. if the berries aren’t ripe & sweet already)
1 Tbsp. lemon juice
1 tsp. vanilla extract
1/2 c. almonds, chopped coarsely

Instructions:

  1. Preheat oven to 350F. Grease an 8 x 8 baking dish with a bit of olive oil on your finger, and line the dish with parchment paper.
  2. Mix together the strawberries, lemon juice, honey, and vanilla extract in a small bowl. Set aside.
  3. Prepare the oat dough as follows: Place oats, almond butter, coconut oil, brown sugar, baking soda, vanilla extract, and salt in a food processor. Pulse several times until oats are completely broken up, but still slightly on the coarse side. Scoop approximately 2/3 of the mixture into the pan, and press evenly in a thin layer.
  4. Mix the strawberries with 2 tablespoons of the remaining oat mixture, allow to sit for 2 minutes, and spread the berries evenly onto the oat layer.
  5. Crumble the almonds into the rest of the oats, mix well, and sprinkle on top.
  6. Bake 35 minutes or until golden brown at the edges. Serves 6-8.
