YOUR HEALTHY PLATE: Dr. Weil’s Spiced Nuts

If you haven’t heard of Dr. Andrew Weil, check out his website here. Once I found this recipe, I knew right away that it was perfect for YHIOYP! Nuts are an amazing, nourishing, delicious, beautiful, flavorful food. They are great as an appetizer, as breakfast-on-the-go, as a midafternoon and after-school snack, or sprinkled on salads, squash and so forth! The best nut? One you haven’t eaten for a while! Mix it up! That’s why this is such a great recipe.

2 tsp. extra-virgin olive oil
2 tsp. grade B maple syrup (deeper, more complex flavor than grade A)
1 tsp. curry powder
1/2 tsp. sea salt
a pinch of cayenne pepper
1/2 cup raw walnuts
1/2 cup raw almonds
1/3 cup raw cashews
1/3 cup raw pistachios

1. Preheat oven to 350F and line a rimmed baking sheet with parchment paper.

2. In a medium bowl, whisk together the olive oil, maple syrup, curry powder, salt and cayenne pepper. Add the nuts, toss well, and spread evenly onto the baking sheet.

3. Bake 10-12 minutes, stirring once after about 6 minutes. As soon as the nuts turn slightly golden in color and a wonderful aroma begins to fill your kitchen, they are done. Better slightly undercooked than over-, so take them out right away. Allow to cool to room temperature, use a metal spatula to loosen and separate them from the parchment, and transfer to a serving dish or airtight glass container. These can be stored in the freezer for up to one month, and the recipe is easily doubled.
