YOUR HEALTHY PLATE: These Chickpeas Bite!

Looking for something special to share with a group of friends this holiday season? Here’s your answer! Chickpeas are amazingly delicious, nutritious, and full of flavor, and you can double down on all those descriptions when you add some creamy, nutty tahini, umami-rich miso, and bright lemon juice, along with some powerful sriracha! Now that’s a recipe guaranteed to satisfy all your tastebuds!

2 tablespoons tahini
2 tablespoons mild, white miso (also called shiro)
2 tablespoons lemon juice
1 tablespoon sriracha sauce
3 cups (2 15-oz. cans) cooked chickpeas


Preheat the oven to 400F and line a cookie sheet (with raised edges) with parchment paper.

Combine tahini, miso, lemon juice and sriracha in a medium-sized bowl, and mix into a smooth marinade. Add the chickpeas and coat thoroughly.

Spread out the chickpeas to the cookie sheet, and roast 15-20 minutes until browned and crispy on the outside. Check the pan and shake it a bit after 8-10 minutes to spread out the chickpeas one more time and prevent burning. Set aside for a few minutes to allow to cool sufficiently to avoid burnt fingertips, and then enjoy!
