YOUR HEALTHY PLATE: Karen’s Spiced Nuts

My friend and fellow yogi Karen Bush comes up with some of the very best recipes, and this one is guaranteed to make you very popular. You can bring it to a party, to book group, to work to share with your coworkers. You can sprinkle it on your salad and turn a little meal into a spectacular celebration. Guaranteed, everyone is going to love it. Continue reading

YOUR HEALTHY PLATE: Seeded Crackers

Last week I posted an essay to help make sure that you find the nourishing crackers (instead of other ones), and I included a recipe. Here’s a second great recipe if you’re up for making yourself a batch of homemade — These are full of tiny little seeds and absolutely delicious. They are easy to make, and then you can eat a handful without any worries about whether you’re eating a whole bunch of nonsense that isn’t really food. Continue reading

YOUR HEALTHY PLATE: “Party Salad” or Sweet & Spicy Kale Chips

If anyone in your house is not eating as many greens as you think they ought to be (whether it’s you, or the kids, or your spouse), then make this asap! Think of it as a kind of party salad. You’ll notice that this particular recipe uses two large bunches of kale, but don’t think that’s too much: once they shrink in the oven, they turn into a moderate-sized bowl of chips at best. Continue reading

YOUR HEALTHY PLATE: Fresh Herbs with Cannellini Beans

What makes this an unusual salad is that the herbs in this recipe play a leading role, complementing the cannellini (small white) beans as equal partners instead of minor players. Think of the herbs in this recipe more as greens than flavor enhancers. It’s a great way to use large amounts of fresh herbs from the garden. It’s super easy, super delicious, and super nutritious; herbs are known to have extremely high levels of phytonutrients. Continue reading

YOUR HEALTHY PLATE: Cauliflower Polenta with Mushrooms

My dad says that you shouldn’t eat anything white except cauliflower. Plus, he loves cauliflower. It may seem a little drastic, but it’s definitely a reasonable strategy for eating more vegetables and less stripped carb. Plus there is so much you can do with cauliflower. Continue reading

YOUR HEALTHY PLATE: Rice & Collards Soup

Last year I was asked to give a talk on vitamins and minerals. For lack of a more inspired approach, I decided to go in alphabetical order, plodding through all these micronutrients like an elementary school teacher. As part of the talk I shared ideas for good sources of the various vitamins and minerals. To my delight and surprise, I discovered that greens were a source of almost every vitamin I mentioned! Who knew? Greens even have tons of orange and yellow nutrients, like beta-carotene. The dark green pigment hides the lighter ones, but they’re still there. Continue reading

YOUR HEALTHY PLATE: Roasted Brussels Sprouts Celebration

If you love sweet, and who doesn’t?!, then you are going to love this recipe! Roasted Brussels sprouts and fennel actually become sweet by a process called caramelization, which happens during the roasting process. That sweet flavor continues to linger in your mouth in a delicious and satisfying way, and it makes this a fantastic dish for a special occasion like New Years Eve. All the work of this recipe is in the vegetable prep, by the way, and after that it’s relatively hands-off. So if you can find a partner to help get the veggies ready, it goes even faster. Continue reading

YOUR HEALTHY PLATE: Cannellini Bean Ragout

I’m starting to think about something warm and a little sweet, with a special bit of pizzazz for the holidays coming up. If you pull out your crockpot and make this, you will be a very happy camper. Your tastebuds and belly will thank you. And me. Probably both of us. Make it soon. Then you’ll have time to make it again for Thanksgiving, or a potluck, or a holiday party. Continue reading
