Lots of my friends think I never eat treats, sweets, or anything fun AT ALL. They are so wrong. Now it’s true that I don’t eat stuff that I would categorize as “food-like,” such as corn syrup, or white flour, or maltodextrin. But I definitely enjoy my share of desserts. For example, the peanut butter cups that I made a couple of weeks ago from quality dark chocolate and organic peanut butter (one ingredient — peanuts), were absolutely sublime, and easy. And yesterday I ate a chocolate macaroon that was pretty yummy.
So yes, I need recipes like these. All food, all nutritious, even maple syrup (in moderate amounts), and way more delicious than anything you can find in a cellophane package. Plus there’s no need to feel guilty about feeding them to your family.
- 2 c. raw walnuts (or pecans)
- 1 /3 c. cocoa powder
- 1 /2 tsp. baking soda
- 1 /4 tsp. sea salt
- 2 large eggs
- 1 /2 cup maple syrup
- 1 Tbsp. vanilla extract
Preheat the oven to 350, and grease an 8×8 glass baking dish with a little olive oil, or coconut oil, or organic butter from cows that ate grass.
Process the walnuts in a food processor until finely ground. Add remaining dry ingredients and pulse to combine. Add the eggs, maple syrup, and vanilla extract, and process until smooth.
Pour into baking dish. Spread evenly and bake for 25 minutes. Cool 20 minutes prior to slicing into squares.
