This recipe is pretty close to the one that Chief Cook-and-Bottle-Washer made for us this past Friday night. With currants instead of raisins, and a drizzle of particularly fruity olive oil, oh boy, were they great!
- 4 large apples (we used Gala)
- 3/4 c. maple syrup
- 1/2 c. small walnut or almond pieces
- 1/4 c. golden raisins
- 2 Tbsp. olive oil
Heat oven to 400. Core apples 3 /4 of the way down, and trim a thin slice from the bottoms of the apples so they sit flat. Place in baking dish.
Fill cavities with walnuts and raisins, placing any extra in dish. Drizzle with maple syrup and olive oil. Bake 40-50 min. until fork tender. Then place apples in small dishes, pour liquid from baking dish over the apples, and serve warm. Eat the leftovers for breakfast.
