YOUR HEALTHY PLATE: Carrot Curry Soup

Had a recent request from a commenter for some more carrot recipes. Okay, here you go! Not only is this soup gorgeous, but it is so nutritious it is amazing! People who are worried about their joints or vision will benefit especially. A great carrot soup from AllRecipes.com.

  • 4 c. vegetable broth
  • 2 tsp. curry powder
  • 1 tsp. ground cumin
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 2 lbs. carrots, peeled and chopped
  • 1 can coconut milk (14 oz.)
  • scant 2 cups warm water
  • 1/2 tsp. chopped fresh cilantro or parsley per bowl
Bring vegetable broth to a boil over medium heat in a soup pot. Remove a small amount (approx 1 /4 cup) of broth to a mug. Stir curry powder, cumin, cinnamon and ginger into the mug of hot broth, pour the spiced broth into soup pot, and add carrots. Reduce to simmer and cook uncovered for 20 min. until carrots are tender. Stir often.
Using an upright blender or food processor, puree batches of cooked carrots until soup is desired texture. Or put a stick blender right into the pot, and blend away! Then stir in coconut milk and water. Return to gentle boil, simmer 5 minutes, and serve hot. Garnish with cilantro or parsley. Makes 8 servings.
