- 2 c. cashews, raw
- 4 carrots, peeled and sliced
- 1 /2 small sweet onion, peeled and diced
- 2 cloves garlic, peeled and sliced
- 1/4 c. olive oil
- 1 Tbsp. tamari
- 1/3 c. water
- 1/2 t. sea salt
- 1/4 t. white pepper
Chop cashews coarsely, and soak in water 15-20 minutes until soft. Then drain water.
In food processor, blend carrots as finely as possible. Add onion and garlic, and blend again. Continue to scrape sides of processor with rubber spatula as needed. Add oil and cashews, a few at a time, and blend until smooth. Add water and tamari, and blend one final time until pâté is perfectly smooth. Chill 2-4 hours, and serve with leaves of endive, or celery sticks, or small, whole-grain crackers. Or spread it inside a wrap and sprinkle with sprouts before rolling it up.
