This recipe is a super-delicious, uber-nutritious gift from a dear friend. He says it was inspired by Michael Symon’s 5 in 5, but this version is vegan! Serve it in a beautiful, brightly colored bowl, and put the bowl on a large red cloth napkin or table runner. My imagination is running wild…
- 1 can (16 oz.) chickpeas, drained and rinsed
- 1 c. scallions, thinly sliced (green and white parts)
- 1/4 c. chopped parsley
- 2 cloves garlic, minced
- 1/2 c. extra virgin olive oil
- Paprika
- Salt and pepper to taste
Mix together the chickpeas, scallions, parsley, garlic and olive oil. Add salt and pepper to taste. Sprinkle with paprika just before serving. Feeds 2-4.
I make a dish like this pretty often. Yummy!
