Dark green leafy vegetables are like taking a multivitamin! They are rich, rich, rich in so many of the nutrients that you need to build a healthy body! Consider making Spinach & Shiitakes for that special someone whose healthy body may be of personal interest to you. 🙂
- 3/4 c. corn kernels (fresh or frozen)
- 1/4 c. cashews
- 2 tsp. extra virgin olive oil
- 1 large bunch fresh spinach, leaves and soft stems
- 1 c. flat leaved parsley, chopped
- 1 Tbsp. apple cider vinegar
- 5 oz. shiitake mushrooms, sliced
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. extra virgin olive oil
- 1/2 tsp. coarse salt
- 2 Tbsp. balsamic vinegar
- ground black pepper, to taste
Wash spinach very well, and dry. Remove tough stems and chop.
Sauté corn in 2 tsp. olive oil over medium-high heat until it begins to brown. Add cashews and saute for 1 minute more, but watch carefully and do not allow to burn. Set aside in a small bowl.
In same saute pan, add 1 Tbsp. apple cider vinegar and drizzle of olive oil. Heat for 1 minute, and then add spinach, stirring up to 1 minute until wilted. Add back the corn and cashews, and mix very gently. Transfer to serving bowl, and dust with freshly ground black pepper.
Once again, in the same pan, heat 1 Tbsp. olive oil and saute mushrooms until tender. Add chopped parsley and continue cooking 1-2 more minutes. Add balsamic vinegar, toss to coat, and sprinkle with salt.
Layer mushrooms on top of spinach, and serve. Serves 1-2.
