Wondering what to make yourself for dinner tonight? Make a meal for two with this magnificent bowlful of flavor, or save half to take to work tomorrow. Then again, you might want to pack this meal-in-a-bowl for a picnic, or to eat once you get situated on that train or plane ride you’ve been planning. A very smart choice…and it sure beats those sad, little pretzels!
- 1 c. red or white quinoa, uncooked
- 2 c. vegetable broth
- 1 Tbsp. olive oil
- 1/4 c. red onion, chopped fine
- 1 clove garlic, minced
- 1 c. edamame, frozen
- 1 small zucchini, chopped
- 2 c. kale, destemmed and sliced thin (chiffonade)
- 1/2 tsp. each salt and pepper
Dressing:
- 1/4 c. tahini
- juice of 1 lemon (approx 1/4 c.)
- 1 Tbsp. maple syrup
- a pinch of salt
First, whisk together the dressing ingredients in a small bowl and set aside to allow time for flavors to blend. Then add quinoa and vegetable broth to a medium-sized pot, bring to a boil, reduce heat to simmer and cover. Cook 15 minutes or until all the liquid is absorbed.
While quinoa cooks, saute onion and garlic in olive oil for 2 minutes. Add edamame and zucchini, and saute 5 minutes. Add kale and cook 30-60 seconds more, until bright green. Remove from heat, and season with salt and pepper.
Now compose your meal-in-a-bowl with 1) a large scoop of quinoa, 2) half the veggies, and 3) a generous drizzle of dressing.
