Some recipes are just more than the sum of their parts. This is one of those kinds of recipes. Make it in advance if that works better for your schedule, and just plan to save the almond sprinkling ’til it’s party time!
- 1 medium onion, sliced
- 2 c. shredded carrots
- 2 Tbsp. + 1/2 tsp. olive oil
- 2 1/2 c. water
- 1 1/2 tsp. salt
- 3/4 c. raisins
- 1 1/2 c. brown rice
- 5 Tbsp. raw slivered almonds
In 3 qt. saute pan, heat 2 Tbsp. olive oil over medium heat. Add onion and cook 5 minutes, until translucent. Reduce heat to medium-low, add carrots, and continue cooking 7 minutes more.
Add water, salt and raisins, cover and bring to a boil. Add rice, stir, reduce heat and cover. Simmer 40 minutes.
Meanwhile, heat 1/2 tsp. olive oil in a separate skillet, heat almonds 5 minutes, stirring occasionally, until just beginning to brown. Set aside.
Uncover rice, fluff with fork, replace lid and let sit (off heat) for 10 minutes. Transfer to a serving dish, and sprinkle with almonds before serving.
Serves 6-8.
