People are always asking me for new breakfast ideas, and I’ve listed more than a few in these blog entries. In this recipe, using an idea I had never seen before, the apples supply the moisture that allows the chia seeds to grow and supply texture, crunch and protein. Make yourself a Sweet Apple Bowl for breakfast, or put your meal into a small bowl with a tight lid, and take it to work for lunch.
- 1 honeycrisp apple, peeled, cored, diced small
- 1 more honeycrisp apple, peeled, cored, cut into large chunks
- 4 medjool dates, pitted
- 1/2 tsp. ground cinnamon
- pinch nutmeg
- 2 Tbsp. chia seeds
- 2 Tbsp. walnuts, chopped coarsely
- 2 tsp. golden raisins
Set aside the finely diced apple in a medium-sized container. Place large apple chunks into a food processor along with dates, cinnamon and nutmeg. Process by pulsing a few times, then continuously for 2-3 minutes, stopping and scraping sides with spatula at least once, halfway through. Pour contents of food processor into container with finely diced apple, and stir in chia seeds.
Refrigerate at least one hour, up to overnight. Divide between 2 bowls, add walnuts and raisins, enjoy.
