Sometimes you need a nice little dessert. Maybe something to go with a scoop of ice cream. Or a glass of tea. Not too sweet, but just sweet enough. This might be the perfect thing.
Oats:
3 c. rolled oats
1/3 c. almond butter
1/3 c. coconut oil
2 Tbsp. brown sugar
1 ½ tsp. baking soda
1 tsp. vanilla extract
1/4 tsp. salt
Strawberries:
2 c. strawberries, chopped
1 tsp. honey (optional–espec. if the berries aren’t ripe & sweet already)
1 Tbsp. lemon juice
1 tsp. vanilla extract
1/2 c. almonds, chopped coarsely
Instructions:
- Preheat oven to 350F. Grease an 8 x 8 baking dish with a bit of olive oil on your finger, and line the dish with parchment paper.
- Mix together the strawberries, lemon juice, honey, and vanilla extract in a small bowl. Set aside.
- Prepare the oat dough as follows: Place oats, almond butter, coconut oil, brown sugar, baking soda, vanilla extract, and salt in a food processor. Pulse several times until oats are completely broken up, but still slightly on the coarse side. Scoop approximately 2/3 of the mixture into the pan, and press evenly in a thin layer.
- Mix the strawberries with 2 tablespoons of the remaining oat mixture, allow to sit for 2 minutes, and spread the berries evenly onto the oat layer.
- Crumble the almonds into the rest of the oats, mix well, and sprinkle on top.
- Bake 35 minutes or until golden brown at the edges. Serves 6-8.
