It’s the beginning of August, it’s a hot and sunny day, and nothing tastes as good as a freezing cold smoothie on a hot summer day! Make it green with spinach, and sweet with tropical fruit, and absolutely wonderful to share with everyone who comes through the kitchen to see what’s going on when they hear the blender whirring away. The color of this smoothie is gorgeous, the spinach is invisible, and the children will love it as much as you do. Enjoy!
- 1 medium banana (the riper, the sweeter, the better)
- 1 cup pineapple (fresh, canned, or frozen)
- 3 large handfuls of fresh baby spinach, washed well
- 1 cup of plain yogurt (Greek, coconut, or almond)
- 1/2 cup water
- 2 large handfuls of ice (optional)
Put all the ingredients into a high-speed blender, fruits last, and spin until smooth. Add more water, just one or two teaspoons at a time, if you prefer the texture thinner. If you use the Greek yogurt, you may also want to use a little more water. Pour your smoothie over ice to make it extra freezing cold. My dad says that if you freeze the bananas and pineapple a day or two before, you won’t need to use as much ice. Serves 2-3.
