YOUR HEALTHY PANDEMIC: Oatmeal Pancakes

Can’t bring yourself to actually make a meal? Almost nothing in the house to eat but oatmeal? Try this comfy, cozy pancake recipe. Not only are they vegan and gluten-free (if you care) but they’re simple to make and easy to clean up after.

  • 1 cup plus 1 cup rolled oats (divided)
  • 1 cup plus 1/3 cup water (divided)
  • 2 Tbsp. coconut sugar (or substitute honey, maple syrup, brown sugar)
  • 2 tsp. baking powder
  • 1/4 tsp. salt

INSTRUCTIONS

  1. Combine 1 cup of oats and 1 cup of water. Let stand at least 30 minutes, and up to 12 hours.
  2. Mix the soaked oats vigorously for at least a full minute or two with a fork or wooden spoon until the oats are broken down and the mixture is mostly smooth. Stir in the remaining cup of oats, 1/3 cup water, coconut sugar, baking powder, and salt until combined.
  3. Preheat a frying pan or griddle to medium-high heat.
  4. Heat a teaspoon or so of butter or olive oil in the pan. Scoop 1/4 cup of batter onto hot surface, spreading into a circle with back of spoon to 4-inch diameter. Repeat with all the batter. Cook until bubbles form on top and edges are golden brown. Flip pancakes and cook 1-2 minutes more until browned and cooked through.
  5. Serve pancakes with maple syrup, fresh fruit, marmalade, jam, peanut butter, or the topping of your choice. Leftover pancakes can be stored in the refrigerator for 3 days if they last that long.
