YOUR HEALTHY PLATE: Chickpea Chica’s Salad

This week we are all about this summer salad, created by our very own Chickpea Chica! The Chickpea Chica has developed dozens of recipes that showcase bright flavors you would never have thought to combine. So we celebrate her talent and thank our lucky stars, which reminds me: It’s not too early to start collecting your recipes for July 4th!

1 ripe peach or nectarine, diced small (1/4 inch)
1 15-oz. can chickpeas (garbanzo beans), rinsed well and drained
2 tsp. fresh cilantro, chopped
2 tsp. fresh basil, thinly sliced into ribbons
1/2 tsp. cumin
3/4 tsp. fresh ground pepper
2 tsp. extra-virgin olive oil

Mix the olive oil and spices at the bottom of a bowl. Add chickpeas and stir well to coat thoroughly. Add nectarines, cilantro and basil, and mix gently. Serves 2-3.
