This very beautiful salad is a perfect gift for your table at this time of year. You can make it with or without the feta. It’s delicious either way.
- 4 c. chopped romaine
- 2 c. baby spinach
- 2 c. mixed greens
- 1/2 c. pomegranate seeds
- 2 very crunchy apples*, cored and sliced as thinly as possible
- 1/2 c. feta, crumbled
- 1/4 c. pumpkin seeds
*consider Honeycrisp, Gala or Granny Smith varieties.
Dressing:
- 1/2 c. balsamic vinegar
- 2 tsp. minced garlic
- 2 Tbsp. raw honey
- 4 Tbsp. extra virgin olive oil
- 1 tsp. salt
- 1/2 tsp. fresh ground pepper
Whisk together the dressing ingredients until perfectly smooth. Refrigerate at least 30 minutes, until ready to serve.
In large bowl, combine greens, apple slices, and pumpkin seeds. Add dressing and toss well. Divide equally among four plates, sprinkle with pomegranate seeds and feta, and serve.
