This recipe is perfect for when you want to impress someone, like a new friend or your future in-laws. But it is easy enough that you just might want to make it for your own crowd. The salmon becomes unusually juicy and flavorful because it essentially poaches in the juice that the onions release as they cook, which makes this a particularly good recipe for wild salmon.
2-pound salmon filet
2 tsp. herbs de Provence
2 large white onions, peeled and chopped very coarsely
Preheat oven to 400F. Rinse the salmon and place on a large rimmed baking sheet, lined with foil to make cleanup easier. Sprinkle the salmon with the herbs de Provence, and then mound all the onions on top so that the salmon is completely covered. Place in oven and cook 20 minutes until salmon is cooked through and flakes easily. Gently brush away the onions and place in a separate bowl for serving. Allow the fish to sit 5 minutes, and then transfer to a large serving plate. Serves 4 generously.
