Chickpeas are amazingly delicious, nutritious, and full of flavor, and you can double down on all those descriptions when you add some creamy, nutty tahini, umami-rich miso, and bright lemon juice, along with some powerful sriracha! Now that’s a recipe guaranteed to satisfy all your tastebuds!
2 tablespoons tahini
2 tablespoons mild, white miso (also called shiro)
2 tablespoons lemon juice
1 tablespoon sriracha sauce
3 cups (2 15-oz. cans) cooked chickpeas
INSTRUCTIONS
Preheat the oven to 400F and line a cookie sheet (with raised edges) with parchment paper.
Combine tahini, miso, lemon juice and sriracha in a medium-sized bowl, and mix into a smooth marinade. Add the chickpeas and coat thoroughly.
Spread out the chickpeas to the cookie sheet, and roast 15-20 minutes until browned and crispy on the outside. Check the pan and shake it a bit after 8-10 minutes to spread out the chickpeas one more time and prevent burning. Set aside for a few minutes to allow to cool sufficiently to avoid burnt fingertips, and then enjoy!
