YOUR HEALTHY PLATE: Walnut Brownies

I have a wonderful recipe for you to make for your kids, your friends, yourself. This might be good for Thanksgiving, too. No big groups this year, of course, so you may end up having to eat it all yourself. Go for it. It will make an amazing breakfast, too, with or without a cup of very good and fragrant black coffee.

Also, I made homemade peanut butter cups a few weeks ago from high-quality dark chocolate and organic peanut butter (one ingredient — peanuts) that were absolutely sublime. There was no recipe. I just melted the dark chocolate in a double boiler, poured a little bit into mini-cupcake tins, let the tins of chocolate cool in the refrigerator for 15 min, slid a small spoonful (maybe 1 tsp.) of peanut butter into each tin, reheated the remaining dark chocolate, and poured it over the peanut butter just until all the peanut butter was hidden. Then I put them into the refrigerator for an hour.

So yes, we all need recipes like these. All food, all nourishing, even maple syrup, and way more delicious than anything you can find in a cellophane package. Plus there’s no need to feel anything less than wonderful about feeding them to your family.

  • 2 c. raw walnuts (or pecans)
  • 1/3 c. cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 Tbsp. vanilla extract
Preheat the oven to 350F, and use your finger to grease an 8×8 glass baking dish with a little olive or coconut oil. If you have butter, especially organic butter from cows that ate grass, you can use that, too. Set aside the dish.
Process the walnuts in a food processor until finely ground. Add remaining dry ingredients and pulse to combine. Then add the eggs, maple syrup, and vanilla extract, and process until smooth.
Pour into baking dish, spread evenly, and bake for 25 minutes. Do not use the “cook until a tester comes out clean” strategy, or it will be way too dry. Just take them out of the oven after 25 min. Allow to cool at least 20 minutes, and then slice into squares. This recipe is very rich, so you may want to cut the squares on the smaller side.

    • Well I think the almonds may give you a slightly more cake-like texture than the walnuts, but I would definitely try it. You may find that they are done cooking a few minutes sooner, too. Please let me know how they come out!
