Inasmuch as it’s going to be around 90F out there tomorrow, I am sharing a recipe that will be perfect for the weather. It’s like a smoothie but a lot thicker. You can eat it as is, or as the base for a smoothie bowl. It’s not ice cream; it’s “nice cream.” And it is delicious. You will need a high-speed blender like a Vitamix for this recipe.
2 large or 3 small-medium ripe bananas
2 tsp. instant coffee (approx. 1 restaurant packet)
1 heaping Tbsp. roasted peanuts
1 1/2 Tbsp. chocolate chips
- Chop the bananas into 1/2-inch chunks, place on a parchment paper-lined baking sheet, and freeze for about one hour until hard.
- Remove the bananas from the freezer, and set on the counter for 5 minutes.
- Blend bananas until smooth in a high-speed blender.
- Add coffee and peanuts, and blend until smooth.
- Add chocolate chips and blend a few seconds until they are the size you like, whether chunks or flakes.
