YOUR HEALTHY PLATE: Oatmeal-Peanut Butter-Chocolate Treats

For almost a decade, I worked side by side with a wonderful doctor, made even better by the fact that his wife, from time to time, would send in a plateful of these seriously yummy oatmeal-peanut butter-chocolate treats. I don’t remember where I put her recipe, but if this isn’t it, well, then it’s close enough. These are sweetly satisfying when you want a treat, and nourishing enough to take the edge off when it’s 2 o’clock and you haven’t had lunch yet. A couple of these with a glass of milk (for snack) or cup of tea or coffee (for breakfast) would also be perfect. And of course they’re not just for grownups. Continue reading

YOUR HEALTHY PLATE: Chocolate Avocado Pudding

This is a great recipe for when you buy a whole bunch of avocados and they all ripen at the exact same time. Not only is it truly delicious, but there is an excellent chance that no one will realize that what you’ve made for them is any different than any other chocolate pudding they’ve ever eaten. Voila! Continue reading

YOUR HEALTH PLATE: Coffee Nice Cream

Inasmuch as it’s going to be around 90F out there tomorrow, I am sharing a recipe that will be perfect for the weather. It’s like a smoothie but a lot thicker. You can eat it as is, or as the base for a smoothie bowl. It’s not ice cream; it’s “nice cream.” And it is delicious. Continue reading

YOUR HEALTHY PLATE: Chocolate-Covered Walnuts

This week I have a simple recipe for you to make alone or with kids, for your own self or for a friend, at any hour of the day or night. YOUR HEALTHY PLATE: Two-Ingredient Fudge (vegan, gf)

If you’d like to try something sweet to calm your mind and nourish yourself from the inside out, both at the same time, you may want to make this two-ingredient fudge. It won’t take more than five minutes, and it will fill your belly with yummy goodness. This fudge is super rich and nourishing, so I really do recommend cutting it into 18 squares. You can still eat as many squares as you like. And you may eat this for breakfast if you’d like, with a cup of coffee or a glass of milk. Continue reading

YOUR HEALTHY PLATE: Sweet Potato Brownies

I’ve heard of black bean brownies before, and I have even made them on occasion, but I had never heard of sweet potato brownies until a couple of weeks ago. This recipe comes from Katherine, a newly arrived co-worker who is committed to good health, running in the sunshine, and preparing delicious, nutritious food. Lucky for us! The amount of sweetness in this recipe makes it perfect for a special dessert, though I wouldn’t hesitate to eat it for breakfast, either.  Continue reading

Just in case you’re looking for one more cookie recipe, I recommend this one. Enjoy to your heart’s content. Continue reading

If you are trying to figure out what to bring to the Memorial Day Picnic that’s coming up, you may want to give some consideration to putting these amazing brownies on the menu. In fact, you’ll probably want to do a dry run and make a practice batch beforehand, just to make sure they come out the way you’re hoping. Yes, that’s probably what you’ll want to do! Continue reading
