This is a great recipe for when you buy a whole bunch of avocados and they all ripen at the exact same time. Not only is it truly delicious, but there is an excellent chance that no one will realize that what you’ve made for them is any different than any other chocolate pudding they’ve ever eaten. Voila!
4-5 Tbsp. coconut milk
3 large avocados (soft and ripe, with bright green flesh)
1/4 cup cocoa powder (not hot cocoa mix)
1 tsp. vanilla extract
2 tsp. coconut oil
2 Tbsp. honey (raw is recommended, but not essential)
Clean and set aside 4 wine glasses or 8 shot glasses and allow to dry completely before you start this recipe.
Place all the above ingredients in a blender, and spin at high speed for one full minute until perfectly smooth. Remove the glasses from the freezer, and spoon pudding from the blender into shot glasses (for mini-sized servings) or wine glasses (for a more memorable presentation). Refrigerate 30-60 minutes. Garnish with a mint leaf, or sprinkle of coconut, or walnut half. Serve cold. Makes enough for 2-8, depending on a whole host of factors.
