Here’s what I made for lunch a couple of days ago. Its success is built on simplicity. My strategy remains similar, week in and week out. Nevertheless, it is never quite the same, and always delicious. Thank you to Alice Waters for teaching me to eat simply. This salad makes one single serving, but is infinitely flexible if you’d like to invite a friend or an army to your table to share a meal. Continue reading

Channeling Alice Waters
The secret to eating a nourishing diet is to keep it simple. One of my favorite cookbooks, written by Alice Waters, is called The Art of Simple Food. The title says it all. Continue reading

YOUR HEALTHY PLATE: Early Tomato Salad
This is not the time of year to turn on the oven or stove. But that’s not going to stop me. The tomatoes are starting to ripen, and it’s time to celebrate. You don’t need more than a knife and a cutting board for this recipe. It’s simple, and it’s oh-so-much-more than the sum of its ingredients. Continue reading
YOUR HEALTHY PLATE: All About Beans PLUS Recipes
Many years ago, my then-vegetarian sister had a boyfriend whose mother served her “bean loaf” when she went to their home. Its dreadful, unappetizing name was nothing like its flavor, so my sister and I renamed it “chickpea pie.” The chickpea pie recipe stuck around for much longer than the vegetarianism (and the boyfriend). I wish I could find that recipe again. Chickpeas, like peanuts, are yet another type of bean. Continue reading
YOUR HEALTHY PLATE: Turkey Meatballs
When I arrived home one night this past week, I was absolutely thrilled to be greeted by the heavenly aroma of a crockpot filled to the brim with small turkey meatballs. The meatballs had been bubbling away for many hours, and they were now ready to be ladled into soup bowls. Lucky, lucky us. Continue reading

YOUR HEALTHY PLATE: Late Summer Garden Casserole
I’m on my way to the farmer’s market to pick up the ingredients for this beautiful casserole, which reminds me of the Italian flag when it’s done! And here’s what you can guarantee at this time of year: there will be no shortage of zucchini, tomatoes or corn at the market, not to mention basil. Continue reading
YOUR HEALTHY PLATE: Best Gazpacho I’ve Ever Made
August means it’s –YES — gazpacho time! I think of gazpacho as soup and salad, both at the same time. Chief Cook-and-Bottle-Washer brought home a tray of golden, acid-free tomatoes last Friday, and (I admit it) I had my coveting eye on them from the minute they entered the house. We ate a few on Friday night, and more on Saturday. Couldn’t resist, so I swooped in on Sunday morning to pulverize the rest! Chief C&BW said it was okay, he would go buy more. Thank you, Chief.
