YOUR HEALTHY PLATE: Tropical Smoothie

Every time you find a little bit of overripe fruit on your counter, peel it and put the fruit into a container in your freezer. Once you’ve collected enough to make this recipe, dance a little jig and say a “hail merry” because it’s HailMerry.com who came up with the original version of this recipe!

  • 1 Tbsp. chia seeds
  • 2 c. unsweetened coconut or almond milk
  • 1 c. frozen pineapple or mango
  • 1. c. frozen blackberries or blueberries
  • 1 inch fresh ginger root
  • 1 c. ice

Soak chia seeds in 1 /2 cup nut milk for 10 minutes. Place the chia seed mixture, remaining 1 1 /2 cups of nut milk, frozen fruits, and ginger in blender. Puree until smooth. Add ice one or two pieces at a time, until it’s running thick and smooth through the blender blades. Then drink up!
