YOUR HEALTHY PLATE: A Bean Salad for Your Next Potluck

Nourishing, beautiful, colorful, full of flavor, fiber, protein. And leftovers, if there are any, will make a superb lunch the next day.

16 oz. can red beans, rinsed and drained well
16 oz. can black beans, rinsed and drained well
16 oz. can garbanzo beans, rinsed and drained well
16 oz. can corn, drained (or 2 cobs worth)
2 large stalks celery, rinsed and sliced very thinly
1 medium-sized red onion, diced small
1 large tomato, diced small-medium
1 cup spicy salsa (if necessary, substitute 1/4 cup tomato paste plus 1 small jalapeño, diced fine)
1/4 cup olive oil
1/4 cup lime juice (juice of approx 4 limes)
1 tsp. salt
1/2 tsp. cumin
1 tsp. chili powder

At the bottom of a wide, beautifully decorated pottery bowl, mix the salt, cumin, and chili powder into the lime juice, and then add the olive oil and salsa.

Mix in the corn and all the beans. Add all but 1/4 cup of the celery, diced onion and diced tomato.
Mix together the remaining celery, onion and tomato, and pile on top to serve as a garnish.
Allow to rest 1/2-1 hour, and then bring to a pot luck along with a large serving spoon.
