YOUR HEALTHY PLATE: Date-Nut “Cookies”

Looking for something inspired for snacks, dessert, or breakfast? Consider these date-nut “cookies.” I called them cookies only because they are round. If you have children at home, they will probably enjoy helping. If you have any vegan and/or gluten-free family members in the high school or college-age range, they will probably thank you, and then volunteer to make them next time around. Under ordinary circumstances I would consider these a special treat for holidays or company, with a cup of coffee or a glass of wine. But nowadays, being absolutely anything but ordinary, I would make them any time at all. I think you’ll like these very much. Sweet and nourishing. Continue reading

YOUR HEALTHY PANDEMIC: Walnut Brownies

Some of my friends think I never eat treats, sweets, or anything fun AT ALL. They are so wrong. It is true that I don’t eat what I would categorize as “food-like” products or manufactured calories like corn syrup, white flour, and maltodextrin. But I definitely enjoy my share of desserts, especially this year. Continue reading

YOUR HEALTHY PLATE: Walnut Brownies

I have a wonderful recipe for you to make for your kids, your friends, yourself. This might be good for Thanksgiving, too. No big groups this year, of course, so you may end up having to eat it all yourself. Go for it. It will make an amazing breakfast, too, with or without a cup of very good and fragrant black coffee. Continue reading

YOUR HEALTHY PLATE: Chocolate-Covered Walnuts

This week I have a simple recipe for you to make alone or with kids, for your own self or for a friend, at any hour of the day or night. Feel free to eat these chocolate-covered walnuts for breakfast with a cup of coffee, or any other time you feel like it. They’re not candy; they’re food, and I hope they satisfy your heart, soul, and mind. And your taste buds. 🙂

YOUR HEALTHY PLATE: Two-Ingredient Fudge (vegan, gf)

If you’d like to try something sweet to calm your mind and nourish yourself from the inside out, both at the same time, you may want to make this two-ingredient fudge. It won’t take more than five minutes, and it will fill your belly with yummy goodness. This fudge is super rich and nourishing, so I really do recommend cutting it into 18 squares. You can still eat as many squares as you like. And you may eat this for breakfast if you’d like, with a cup of coffee or a glass of milk. Continue reading

Take Back Your Teaspoon!

Did you know that most sodas are sweetened with a teaspoon of sugar per ounce? That means the average 12-oz. can of soda (pop) contains the equivalent of 12 teaspoons of sugar. Excessive, to say the least. Actually, it causes diabetes and obesity. Not in my cup of tea. When would you ever consider putting 12 teaspoons of sugar in your glass of iced tea? It seems absurd when asked this way, but people are doing it all the time — every time they pop open a can of soda. This week, we’re talking here about the crazy amounts of hidden sugar in processed items. Continue reading

Stripped Carbs: The Emperor’s New Clothes

I promised a friend that I would write another post about stripped carbs and processed edibles. Sometimes stripped carbs are called simple carbs, but there’s nothing simple about them. Stripped carbs include white flour, white rice, corn starch, corn syrup, sugar, fruit juice, and beer. It’s not that you can’t eat them at all; it’s that Americans are drowning in them. Continue reading

Laurel Gallucci’s Insanely Wonderful Chocolate Cake That Changed Everything

From time to time I post a dessert recipe, but it’s usually something tame, like apple slices. Just kidding. But seriously, I don’t post a lot of dessert recipes.

This recipe, on the other hand, breaks the mold. It is, by far, the most decadent thing I’ve ever posted on YHIOYP. Even if you never make it yourself, you have to appreciate the talent and passion of a woman who figured out how to make a cake like this. I thought it would be the perfect thing for anyone who is inspired to make something spectacular for the holidays. Continue reading
